ALGAE AND OCTOPUS PULPO DE LAS RÍAS ALTAS Octopus is one of the most emblematic products of Galician gastronomy. Not only the product itself but also its way of preparing it: the famous octopus a feira.
Everything that surrounds this cephalopod is intrinsically linked to Galicia: its habitat in the estuaries, its capture in pots, its way of cooking it and especially its way of consuming it.
In Cabañas Fisterra you can taste the authentic octopus of the Rías Altas. An octopus that has grown and fed on the rich ecosystem that the estuaries offer, and that is captured with pots, an artisanal and sustainable fishing system.
OCTOPUS CATCH PROCESSES The nasa is a semi-pass fishing art, as a trap, which remains static on the bottom and at the same time attracts the species through a bait. The octopus nasa basically consists of a framework or skeleton, a coating and other secondary structures such as the funnel and the boiler.
This type of trap art is the most used in Galicia. The octopus nasa system respects the environment and is very selective, since those specimens that enter the rig and do not meet the minimum size are returned alive to the sea. With the nasa system of the octopus the accidental capture of other species is avoided, so it is not harmful to the marine environment.
ALGAE Algae have been used in Galicia since ancient times for agricultural uses. They were used as fertilizer or as food for livestock.
However, in recent decades its consumption has increased significantly, thanks to the discovery of the benefits of its use in human nutrition:
- High nutritional value - Medicinal properties In Galicia there are more than 600 types of algae, of which about 25 are used in food. The types of seaweed of the Costa da Morte have reached a greater relevance, standing out for their culinary qualities and becoming in a very short time a food of daily consumption in many homes, especially as a natural condiment.
In Cabañas Fisterra we offer you a menu of Atlantic algae, that is, those that grow and are found on our coasts:
Sea Spaghetti Seaweed Alga Dulse Moss seaweed from Ireland Sea potato seaweed Sea succulent seaweed Galician alga Kombu Nori seaweed Seaweed Seaweed Sea truffle seaweed Alga Wakame Seaweed Agar Alga barnacle Alga Carrapicho de Mar ALGAE CATCH PROCESS All the algae suitable for human consumption are harvested manually and dried by hand.
The harvesting of the seaweed is done in a totally artisanal way. Afterwards, the fresh algae are checked, selected again and dried in drying chambers at low temperature. In this way, the air and its own marine salts conserve them in a natural and lasting way.
All these processes are carried out in a sustainable manner and trying to maintain the maximum nutritional value of the algae.
PRODUCT TASTINGS In Cabañas Fisterra we organize tastings of octopus from the Rías Altas and Galician algae so you can taste the authentic flavor of Fisterra and the Costa da Morte.
GUIDED VISITS TO THE LONJA From the hand of an expert guide you will discover the Fisterra market inside: how it works, its organization, its methodology and what process the octopus of the Rías Altas and the Galician alga goes through to your table.
