This experience is a sensory journey to the heart of Extremadura, where tradition and flavour come together at the Doña Leonor de Alburquerque Cheese Factory. Here's how the itinerary goes:
• Reception and Origins: We'll start the tour at the entrance of the cheese factory, where we'll give a brief introduction about its history and its commitment to artisanal production.
• Production Immersion: We'll tour the processing rooms to see first-hand how goat or sheep's milk is transformed. We'll explain phases like curdling, cutting the curd, and manually pressing it into moulds.
• The Silence of the Cellars: We'll visit the ripening chambers, a place where time and humidity work their magic. Here, you'll learn to distinguish the different natural rinds and the daily care (turning and brushing) that each piece receives.
• Guided Tasting of “The Essentials”: The visit ends with a tasting of their star products. We'll try a selection of their most popular cheeses, accompanied by a glass of local wine to enhance the nuances.
• Closing and Free Time: The tour ends at the cheese shop about 1 hour and 30 minutes after it starts, where you can buy your favourite products if you like.
