Depart from Palazzo ReSilente and head to the village of Novi Velia, in the heart of the Cilento National Park. You will be greeted by a genuine local shepherd who will take you to the slopes of Mount Gelbison by jeep. Here, among the pastures and scents of the Cilento scrub, you will witness the live preparation of mozzarella nella mortella, a local speciality born from the need to preserve cheese and which has become a gastronomic excellence. You will learn how it is made, how it is processed, and why it is wrapped in myrtle leaves.
Immediately afterwards, a food tasting with freshly made mozzarella nella mortella, caciocavallo, and Cilento wine will let you savour the true taste of Cilento.
Finally, you will return by jeep to Novi Velia for a walk in the village: among stone alleyways, the Norman tower, breathtaking views of Mount Gelbison, and stories of transhumance, culture, and spirituality.
