Set off from Hobart to experience some of the most stunning natural views in all of Tasmania. Make your way to the summit of Mt. Wellington, scope out panoramic views of the coast, and sight brightly coloured indigenous birds. End your day with time to relax in the manicured gardens of Australia's oldest brewery.

Following convenient pick-up from your Hobart hotel, head west for about a half-hour. Before you know it, you arrive at the lookout on the summit, which sits at 3,950 feet (1,200 metre) above sea level. Gaze out onto 360-degree views of Wellington Park with its rugged hills, sparkling river, and craggy rocks. As you snap photos of the breath-taking scenery, listen to your guide share fascinating stories of the mountain's history. Hear the tale the notorious Rocky Whelan, a bushranger who lived in a cave and murdered unsuspecting travellers in the 1800s.

Continue onto the nearby picnic area known as The Springs, where it's easy to glimpse endemic birds like the multicoloured green rosella, the yellow-throated honeyeater, and the crow-like black currawong. On your way back to Hobart, stop by the Cascade Brewery, the oldest is all of Australia. Head inside to buy a pint of Cascade Pale Ale or their award-winning stout, or spend a few moments soaking up the sun in the lush gardens.
