In Bangkok, the headline eatery is Cy’an, with Moorish, seafood-centric menus overseen by Amanda Gale, a brilliant Australian chef formerly of Rockpool, Sydney, and Parrot Cay, a COMO sister resort in the Turks and Caicos. The second restaurant is called Glow, an oasis of organic, healthful cuisine inspired by Gale’s proven commitment to energising nutrition.
